Rinse grape leaves and blanch in boiling water for 1 minute if using jarred leaves.

Mix rinsed rice with diced onion, chopped tomato, pine nuts, chopped dill and mint, 2 tbsp olive oil, lemon juice, salt, and pepper.

Place a spoonful of filling on each grape leaf, fold sides in, and roll tightly.

Arrange rolls seam-side down in a pot, add 1 cup water, remaining olive oil, and lemon slices on top.

Cover with an inverted plate to keep them in place, simmer on low for 40-45 minutes until rice is tender. Serve at room temperature.
